Cassava Cake Recipe
Serves 12-18
Made even more exciting if served on a fine china and embellished with a cherry on top. Ideal dessert to accompany tea or coffee.
Base
To make,you will need:
2 packets of Simex frozen grated cassava
2 cans 14 fl oz coconut milk (or 2 1/2 cans of 9 fl oz Ayam brand)
1/2 cup light brown sugar (or 1 cup or more if you like it sweeter or if you're using Ayam brand coconut milk)
2 eggs
1/2 cup melted butter
1-2 teaspoons vanilla essence
Pre-heat the oven to 350 degrees Farenheit. Mix all the above ingredients together in a 9 x 13" and 2 inches deep baking dish, using a fork. Bake for 30 minutes or until brown.
Topping
1 can 14 fl oz coconut milk (or 1 1/2 cans of 9 fl oz Ayam brand)
1 can condensed milk
1 packet grated young coconut-Buko
1 1/2 to 2 tablespoons all purpose flour
In a bowl, mix all of the ingredients above. Pour this mixture on the browned cassava base.
Bake for another 30-45 minutes or until done. To finish, grill the top until brown, possibly 5-10 minutes. Be very careful not to burn your cake. The newly baked cassava will be a little bit soft , but gets harder when it cools down. Refrigerate before serving, if desired.
